Healthy Meal Idea: Oven-Baked Chicken Fingers

My daughter and I got back from her soccer game late in the evening and we were famished! I wanted to put together a quick healthy meal, so I turned to some thinly sliced chicken breast that I had in the fridge.

  • First, my daughter and I toasted two slices of whole wheat bread. I put them in the blender and voila! Healthy homemade bread crumbs!

  • Next, I beat one egg and poured it on a plate. Then I made a simple assembly line of chicken, plate of beaten egg, and bread crumbs.

  • One by one, I coated each piece of chicken in egg and then bread crumbs. I placed them on a baking tray that was sprayed with coconut oil spray.

  • The chicken fingers were placed in a 375-degree oven and baked for about 30-40 minutes until the breading is crispy.

  • I served the chicken fingers with a quick little salad, some sweet, juicy watermelon cubes. You could also serve them with some whole-grain macaroni and cheese.

I bought extra chicken breast so that I could cook them for a meal tomorrow. I simply sautéed the thin chicken breasts in a pan with a little coconut oil and salt and pepper.

Remember: adults and children should always wash their hands after handling raw chicken. And don’t keep raw chicken above food items like salad in the fridge!

My daughter and I enjoyed a healthy and balanced meal after some quick and simple preparation. The key is to plan ahead on those nights when your family has afterschool activities and sports practice. It’s possible to eat healthy in a hurry!
